Chicken Curry for Four

Chicken Curry for Four

                   

2-4 skinless chicken breasts                              
¼ cup butter
½ onion chopped
¼ cup olive oil
¼ tsp salt
¼ tsp pepper
¼ cup flour
4-6 cloves garlic chopped
Pinch cayenne powder
2 cups chicken broth
Curry powder to taste
1 cup milk


Melt butter in sauce pan along with olive oil.  Add chopped onion and garlic to sauté.  Add flour and chicken broth.  Stir constantly over medium heat until smooth.  Add seasonings.  Add pre-boiled shredded chicken.  Continue to stir over low heat.  Serve over rice with Peanuts, raisins, chutney, bananas, coconut, etc.   

For my husband's last birthday party, I had a patio party with a sit down dinner for 54 people.  I multiplied this recipe and made multiple batches.  Do not double the number.  I had WAY too much sauce.  Then I ordered the rice from a local Chinese take out.  Sooooo easy.  I boiled all of the chicken in multiple crock pots to make life easier.
